Ellen Fitzgerald and Claire Schlemme are poised to take the food truck world by storm. With their natural ingredients and fruity blends, the two will venture into the land of moving food with Boston’s first juice truck, Mother Juice.

Thanks to Kickstarter, Fitzgerald and Schlemme were able to raise enough money from backers to fund their food truck and kitchen supplies to get their project off the ground and onto the road. Currently, Mother Juice has $14,006 pledged from 221 backers. Based on the $13,000 goal they set for August 9th, the girls did pretty well for themselves. But they are not done yet. According to their Kickstarter, the ladies are still looking for additional funding to get their truck rolling. As a prize, backers will be given juice-themed postcards.

Now that their project is becoming a reality, Fitzgerald and Schlemme still have some loose ends to work out. Once they have finalized their plans, expect to see farm-fresh drinks rolling down the streets in no time. In the midst of their crazy food truck hunt, the ladies of Mother Juice took the time to answer some questions about their next steps.

Now that you have the proper funding, what are the next steps to make your juice truck a reality?

Now that we have our funding, we are ferociously scouring Craigslist for used food trucks. We hope to buy one in the next two weeks, after which point we’ll work with the city to get our official stamp of approval (i.e., permit from the board of health, fore department, etc.) In the meantime, we’ll be visiting local farmers’ markets, connecting with local farmers and buying produce, trying out recipes, and having taste-testing focus groups. We’ll also be participating in the Swirl & Slice market in Union Square the next few Thursdays.

What was your reaction after finding out you had met your goal?

AHHHHH [insert lots of exclamation points here]!!! It was surreal and definitely marked a turning point for the business that we’ll never forget. I think we both had this moment of “I can’t believe that this is actually going to happen!!!” Honestly, we cannot put into words how much Kickstarter (a.k.a. our backers) mean to us. We’ve been totally overwhelmed and humbled by the outpouring of support that we’ve received to get Mother Juice rolling. Knowing that we have the support of our community behind us makes us that much more excited and inspired to get out there and start juicing.

When and where do you think the truck will open?

We won’t know where we will be until we are fully permitted by the city (which won’t happen until we get our truck). But we are hoping to be out there by early September and plan to be at spots in the city during the week and then partake in farmers’ markets and festivals on the weekend.

How do you envision the truck looking?

As for layout — we want to have a really big window so that our customers can see what is going on inside the truck. We want to showcase all the delicious produce that is making its way into every juice and for our customers to see that it really is garden to glass!! As for the look, we want our truck to be colorful, for sure. And one side will be covered in the names of our backers =) If there are any artists reading this who have ideas for how to paint a truck — give us a shout!!
