Lavender fields. Ancient art. Vast, open markets. This is France’s southeastern oasis, Provence – home to some of the most memorable meals you’ll ever eat. Here, five things to know about this culinary gem.

1. Three of Provence’s six territories border the Mediterranean Sea. Meaning? Italian and Greek influences are more prevalent than typical French fare.

2. Sun-drenched summers and cool, wet winters equal fresh vegetables, fruits, nuts, fish, and herbs. Not as common? Dairy, beef, and pork.

3. On every Provençal cook’s shelf (or vine): extra-virgin olive oil, garlic, and tomatoes.

4. Salade Niçoise. Bouillabaisse. Ratatouille. (Start Googling.) These classic dishes were all born in Provence.

5. Produced in the region for over 2,000 years, rosé and red wines flow like water here. Be sure to pair one with each dish.
