Well, the secret’s out. Chipotle is now serving up a vegan option, “Sofritas.” I guess all that shredded cheese and beef just wasn’t for everyone (poor souls).

After a few successful test launches, the Mexican grill will be serving the Sofritas in both Boston and New York City starting on March 3. So what exactly is a Sofritas dish? The vegan meal will include: organic shredded tofu braised with chipotle chilies, roasted poblano peppers and a blend of aromatic spices, according to a release.

Sofritas will be available in burritos, tacos, burrito bowls, and salads and can be combined (thank god) with other signature Chipotle ingredients. So perhaps you can un-veganize your vegan burrito, if you so choose?

Steve Ells, Chipotle founder, chairman and co-CEO, stated in a release that, “Sofritas is a very different kind of menu item… In creating the recipe for Sofritas, we wanted to produce something that would appeal to vegetarian and vegan customers, but that was delicious enough to have crossover appeal as well.”

“Crossover appeal,” eh? We’ll have to wait and see how a tofu and peppers-filled burrito tastes and whether it earns our seal of approval. But I have to admit – that picture (above) is actually making me pretty hungry.
