A whole new kind of pop-up dining experience is coming to Boston in the new year. The Boston Globe is reporting that Dinner Lab, a self-described social dining experiment in which up-and-coming chefs can showcase their cooking chops and culinary passions to local diners, is launching today, December 22 in Boston.

The Globe describes the organization as “a national, members-only culinary pop-up that helps rising chefs gain exposure.” The pop-up experience launched two years ago and is currently available in 23 other U.S. cities. Now, Boston diners can taste it for themselves starting on February 20, 2015 at the first local event, featuring Chef Mario Rodriguez, a Babson College graduate.

In order to grab a seat at the table, potential diners must first purchase a membership and enroll at dinnerlab.com. Once a member, diners will be “invited to attend unique dining experiences that bring some of the best up-and coming culinary talent across the country to your table in an intimate and interactive format,” states their website.

We should also note that the locations of these Dinner Lab pop-up events aren’t revealed until the day before. The Globe notes that the “diners feast at communal tables and rank each course, offering the chef candid feedback on comment cards.”

The membership fee in Boston is $175 – though the Globe reports that “prices might be scaled on a first-come, first-served basis.” And just in case you’re still looking for a first-rate Christmas present for the foodie in your life, Dinner Lab does offer the option to “gift” a membership.
