The past week has been a busy time for Mitch Hayes, general manager of Boston Chops. With Dine Out Boston’s return, the South End restaurant hasn’t been lacking in hungry customers. Who could pass up that $38 prix fixe dinner menu, after all?

The restaurant, which describes itself as an “urban steak bistro,” is certainly one of the most popular in Boston. And it’s Hayes who somehow manages to keep this steakhouse on its axis.

Here, Hayes tells BostInno how he spends his day-to-day in Boston.

How do you spend most mornings?

Well being a restaurant manager leads to quite a few late nights so as much as I try to wake up early and run errands I’m usually sleeping.

What are the top priorities on your to-do list right now?

In my personal life, I would like to run a Half Marathon in the fall. For work, I am focused on Boston Chops providing the best Dine Out Boston experience to our guests these two busy weeks.

What is the best part and the worst part about your day?

The best part of my day is usually grabbing drinks after work with my husband or friends. The worst part is usually the morning after doing this.

What has been your favorite thing about working at Boston Chops thus far?

The Staff. I’m surrounded by passionate, fun, knowledgeable people. It’s such a fantastic environment to work in!

Any Dine Out Boston specials you recommend to our readers?

If I was eating the Boston Chops menu (and I have!), I would definitely have the Local Oysters on the Halfshell followed by the NY Strip with Fries and Salad and then finish with our delicious Sticky Toffee Pudding.

If you could impart one piece of advice to our readers, what would it be?

“Do what you love and love what you do.” I graduated Boston University with a chemistry degree but wanted to follow my passion of working in restaurants. And I get to enjoy coming in to work every day! Its priceless.

What would you do if you were suddenly granted a day off from work tomorrow?

I would do some projects around our house as my husband and I just bought a place in June. Well that’s what I should do. There’s a good chance I wouldn’t do that and instead enjoy the last few days of summer outside with friends!

If you weren’t answering my questions, what would you be doing instead?

Paperwork! So thankfully I get to procrastinate that by answering these questions!
