Boston could use more bagel shops – I think that’s something we can all agree on (especially after news arrived that Bagel Rising will be replaced by another Pavement). Luckily for us, one beloved bagel pop-up is transforming into a real shop, according to Boston Restaurant Talk.

Bagelsaurus, which currently resides within Brookline sandwich shop Cutty’s, will allegedly be opening a fully functioning shop in Porter Square. Boston Restaurant Talk cites a License Commission General Hearing page from the City of Cambridge website, which shows that the restaurant will be located at 1796 Massachusetts Ave. in Porter Square, with 19 seats and hours from 7 a.m. to 3 p.m. Tuesdays through Sundays.

Mary Ting Hyatt, who owns and operates Bagelsaurus, describes her bagels as chewy with a crackly exterior, as well as lighter than the New York and Montreal varieties, on her website. All the bagels are hand-shaped, boiled and baked, and come in nine flavors: Plain, Everything, Sesame, Poppy, Sea Salt, Black Olive, Pretzel, Cinnamon Raisin and Seeded Wheat. Currently, the Bagelsaurus pop-up, which Hyatt calls a “micro-bagel bakery,” is a twice-weekly operation, opening at 8 a.m. on Fridays and Saturdays and running till the bagels run out – which you can assume is pretty quickly.

Keep your eyes and ears out for more updates leading up to Bagelsaurus’s full-time opening, and in the meantime, head to Cutty’s at 284 Washington Street in Brookline to get your sea salt bagel fix.
