With the temps dropping quickly outside, it’s time to embrace sweater weather, fall food and all of the other autumnal spices of the season. And what better way to taste the fall season than to indulge in your very own fall cocktail?

We’ve already given you recipes from some of Boston’s best bartenders for pumpkin, pear and spiked apple cocktails—and we hope that you’ve enjoyed imbibing on these delish drinks this fall. But now we’re going to spice it up just a little with Boston’s newest concoction, The Bishop.

And no, I’m not talking about the hot “Smoking Bishop” drink from A Christmas Carol (although I’m sure that tastes great as well), but a unique fall cocktail that has a flavor all its own. This cocktail is an ode to one of fall’s best spices: cinnamon. After all, without the tasty cinnamon spice how would we enjoy autumn cobblers, crisps and cider? Whether you decide to shake it up at home or drink it out on the town, here’s how to take full advantage of the cinnamon spice this season.

As you ponder your options for Friday night, my guess is that The Beehive may appear at the top of your list. This South End eatery and bar not only has great music and food, but also delicious, handcrafted cocktails. The bar’s newest addition to the cocktail list includes none other than The Bishop. Served up in a chilled martini glass, this drink is filled to the brim with a mixture of Hennessy VS Cognac, Yellow Chartreuse and (of course) Monin cinnamon syrup. The complex texture and cinnamon spice will go down nicely, making this trip to the Beehive well worth the effort.

Make It:

Make The Bishop right in your very own kitchen. Here are the ingredients and instructions from The Beehive’s bartender. Sounds fairly simple to me, just make sure you have all the right ingredients and stir it accordingly.

Ingredients:

1 ˝ oz Hennessy VS Cognac

˝ oz Yellow Chartreuse

Byrrh aperitif

Monin cinnamon syrup

Method:

  1. Build over ice
  2. stir and strain into chilled martini glass
  3. garnish with an orange twist
