This past week we had our first real snow here in Boston. And while I can never get enough of those glistening, powdery white snow flakes – the icy slush is a whole other story. Once the cold temps start to make your everyday commute practically unbearable, it becomes necessary to start eating your feelings. And the best way to do that is with a classic grilled cheese and tomato soup.

Truly the epitome of comfort food and all things cozy, a grilled cheese with a tomato soup is (in my opinion) the best way to treat yourself this winter. Which is why– on a very cold night – I decided to head to Hops n’ Scotch in Brookline to try their southern-esque take on the comfort food.

After (clearly I hated it)

The restaurant serves up a grilled cheese on texas toast with your choice of cheddar cheese or (my fave) pimento cheese. And (of course) a creamy tomato soup, also the perfect dip for your buttered up sandwich. And I can’t lie – it’s pretty impossible to not like a grilled cheese – and absolutely impossible to not like the one at Hops n’ Scotch. I also thought that the pimento cheese option was a great southern twist on the classic sandwich. I can attest that in the south we do indeed smother pimento cheese all over toasty bread slices, resulting in an even better version of the staple comfort food.

I knew the sandwich would certainly be tasty, but to my surprise, the creamy tomato soup was actually my favorite thing about this dish. It was utterly divine and I could have slurped up another bowl – no problem.
